DTR10173| FOOD STUDIES SESSION I : 2024/2025

FOOD STUDIES focuses on the understanding of cooking theory and the application

of skills to a wide range of cooking styles and products. Students will be introduced

to the foodservice establishment and organization. Every aspect in cooking is

explained starting from the basic equipment and utensils to cooking techniques, role

of the ingredients used, garnishing and food presentation, food commodities, salad

and salad dressing, stock, sauces, and soup.

DTR10183| INTRODUCTION TO RESORT

INTRODUCTION TO RESORT exposes students with the necessary knowledge related to resort in tourism and hospitality industry. Students will gain exposure to the wide range of facilities, recreational and club management activities offered by resorts as well as meeting up to the expectations of resort guests. Besides that, students will also gain knowledge on resort safety, security and current trends in resort industry.
